Ayurveda Green Detox Soup


One of the main ingredients in our Ayurveda Green Detox Soup is Swiss chard. Who can pass up the cheery rainbow chard that presents more like a bouquet of flowers than a superfood--but it is!


Swiss chard is in the same botanical family (Amaranthaceae) as some of our other favorite ingredients on the Saumya recipe blog including: beets, beet greens, quinoa, and spinach.


As a superfood, chard is a good source of vitamin A, K, C and magnesium. It even helps our eyes by supplying the antioxidants beta-carotene, lutein, and zeaxanthin.


At Saumya Ayurveda, our philosophy is gentle and less is more. Using this Ayurveda Green Detox Soup as food as medicine, is also a gentle, nourishing way of cleansing and detoxing.


What does a soup detox do?


Soup is easy to digest so it provides the digestive system a much needed rest. Eating lightly allows the digestive tract to clear out and clean up completely between meals.

Ingredients:


  • 2-4 cups fresh greens, such as Swiss chard (spinach, cress, kale, and beet greens can also be used or combined.)

  • 2-4 cups asparagus (If you like it, add more)

  • 2 cups celery (look for celery that is green and not white with a hint of green)

  • 2-4 cups fresh green beans

  • About an inch of fresh ginger root (Vata and Kapha can use more, Pitta, be conservative.)

  • 1+ cup cilantro (a respected detoxifier)

  • 1/2-1 teaspoon Hawaiian Red Alaea Sea Salt (packed with minerals)

  • Brown Mustard seeds, Turmeric, Cumin, Fenugreek, Coriander--How much of each, use about 1/2 teaspoon of each. (Vata and Kapha can use more fenugreek, Pitta can customize by using more coriander and turmeric.)

  • 1 teaspoon ghee (or olive oil or your "best oil" from your Saumya Ayurveda food program

  • 1 fresh lemon

When it's harvest time, adjust the amounts of what you're using based on what is freshly available. Recipes to me are more of a framework. If you have tons of green beans for example, use more of them in your Ayurveda green detox soup.

Instructions:


  1. Chop up the vegetables. You can be rustic about it as the veggies will go in a blender. "Don't fuss about it" as my grandmother used to say, helping everyone around here keep lighthearted.

  2. Put your no fuss vegetables in a saucepan and sauté until they are soft, about twenty-five minutes but it depends on your stove, pan, and elevation.

  3. While the veggies are cooking, finely chop your ginger (get a little fussy here, you want it nicely minced) and herbs. Set them off to the side, we'll get back to them.

  4. If you're cooking your veggies in a pot and you have an immersion blender, you know what comes next--blend them up until smooth. If you're using a blender, wait for the vegetables to cool off and then blend them up until smooth.

  5. Add the herbs and salt and blend it in until the soup is silky smooth.

  6. In a small saucepan, add 1 teaspoon ghee (or your best oil) and melt it. Add the spices and coat them in the oil. Add the ginger. Once you smell the aromas of these amazing culinary and digestive herbs, add this mix to the blended soup and stir it in well. Simmer for about 15 minutes.

  7. Squeeze in some lemon juice.

  8. Adjust salt and lemon so it tastes like you just won't be able to get enough of it.

  9. If your fortunate enough to have fresh chives, finely chop some up and garnish your Ayurveda Green Detox Soup.
