Delightful and Healthy Recipe: Cilantro Coconut Chutney for Cooling and Cleansing
Ingredients:
6 tablespoons of chopped organic cilantro leaf (use more or less, it'll work out great)
1-2 teaspoon of shredded fresh ginger root
1-2 teaspoons fresh lime juice, or more if you like lime
½ cup grated coconut, more if you like it more coconutty!
2 tablespoons cashews
1/4 teaspoon brown mustard seed
1/2 teaspoon cumin seeds
A little water to blend
Directions:
Mix all ingredients and blend together to a thin paste. Add Himalayan pink salt to taste.
Blend to a consistent paste.
Enjoy fresh on your cooked vegetable, beans, rice and more.
