What makes root vegetables grounding for Vata?


Look at where they grow-under the earth. They are anti-Vata veggies! Root vegetables ground us, help us heal and recovery when depleted or tuckered out and support the root (Muladhara) chakra. If that wasn't enough, root vegetables are chocked full of complex carbohydrates and phytonutrients.

Those of you who are my clients know I don’t use recipes. I see them more as suggestions. I’ll tell you way. Recipes can create stress—one needs the exact items and if something is missing, it’s back to the store. Not for me. Who needs the stress? I could be doing an 11-minute guided practice instead of another errand.


Instead, I focus on fresh items available at the local grower’s market, what came in the CSA box, and what’s in the house. My Vata Grounding Curried Roots Roast is no exception.


This recipe will work with any root vegetables, so mix and match and have some fun.

Carrots (my favorite are the Purple Dragons), beets (Chioggia, golden and the classic red beetroot), turnips, parsnips, and rutabagas. Tip: pick a variety of vegetables and cut them to approximately the same size to ensure even roasting.


Fresh vegetables don’t need much because they taste great, olive oil and real salt and pepper is simply delicious.


Depending on your doshic picture in general, and your digestive system specifically, Autumn is a Vata provoking time and digestive spices optimize our health.

Ingredients:


1. 1 red onion rustically chopped

2. 4 tablespoons coconut oil

3. 1 tablespoon curry powder

4. 1 tablespoon garam masala

5. 2 teaspoons lemon juice

6. 1 tablespoon fresh ginger root finely chopped

7. 1 ½ teaspoon Himalayan salt or other real salt

Instructions:

1. Arrange a rack in the middle of the oven and heat the oven to 425°F.

2. Peel 3 pounds root vegetables, cut them into rough 1-inch chunks. Cut 1 small red onion into 1-inch chunks. Place the root vegetables and red onion on a rimmed baking sheet.

3. Coat the chopped veggies in 3 tablespoons of the coconut oil

4. Spread out in an even layer

5. Roast for 20 minutes, remove from oven and set aside.

6. Combine the remaining 1 tablespoon of coconut oil, curry powder, garam masala, lemon juice, ginger, and salt in a bowl to make a sauce.

7. Coat the roasted veggies in the curry sauce mixture.

8. Place back in the oven and roast an additional 10-15 minutes, or until vegetables can be easily pierced with a fork.

9. Add additional salt to taste (if desired) and serve immediately.

10. Garnish with shredded or dessicated coconut.
