Ingredients:
2-3 tablespoons chia seeds, soak in water soak for 5 minutes or up to 20 for a more pudding consistency.
1 cup coconut water
½ cup cucumber
1 whole lime, freshly squeezed
Fresh mint, about 1 teaspoon or to taste (optional but it IS delicious fresh out of the garden)
