A tried and true vegetable from One of the nutritional and healthy vegetable, this light, neutral tasting veggie delivers many benefits. This gourd is found in Africa, Asia, Europe and the Americas.


Known to be good for both Vata dosha and Pitta dosha, it also is respected for cleansing the liver (hello heat/Pitta). It is alakalzing and high in water so it helps hydrate during summer's high heat. Loki is cooling and refreshing.


I've been sharing this recipe with clients for many, many years. Try it and see how it works for you. Given the neutral taste of loki/bottle gourd/calabash, it lends itself quite nicely to my personal favorite way of enjoying it--tacos!

Livin' La Vida Loki- Ayurvedic Bottle Gourd Recipe


Ingredients:

  1. 1 teaspoon ghee or your best oil from your Saumya food program

  2. ¼ teaspoon ground coriander

  3. ¼ teaspoon ground cumin

  4. ¼ teaspoon ground fennel

  5. ¼ teaspoon ground turmeric

  6. 1 loki squash peel and chopped into 1-inch chunks. * Adjust the recipe based on your food program. Get creative. * I like to use Trader Joe's taco seasoning packets for Tacos Loki.


Directions:


1. Melt the ghee, or your best oil from your Saumya Ayurveda food program.

2. Add the spices.

3. Cook over low heat for 1-2 minutes mix well into the oil and spices.

4. Add the loki and cook, stirring for another 2 minutes.

5. Put on the lid and let it sit for 15-20 minutes until soft.
