Journey into Flavor with Ayurveda Sweet Potato Lentil Curry
Ingredients:
2-4 tablespoons olive oil
2 shallots, leeks, scallions, or chives chopped finely
1-2 inches grated fresh ginger (Kapha and Vata benefit from more ginger)
2-4 tablespoons red curry paste (Kapha can use more, Vata too, Pitta-go easy!)
Note: If you don't have curry paste on hand, relax, you can use 2-4 tablespoons of curry powder
1 cup dried red lentils (or whichever kinds of lentils you have in the pantry)
2-4 sweet potatoes, peeled and cubed
2-4 cups spinach (or other leafy greens such a dandelion, rapini, chard, kale)
3-4 cups broth or water
2 tablespoons soy sauce, tamari, or coconut aminos
1 tablespoon creamy peanut butter or other nut or seed butter
1 can coconut milk or cream (yup, the thick, full fat stuff)
Fresh squeezed juice of a lime
1/2-1 cup cilantro finely chopped
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the shallots (chives, scallions) sauté until soft.
3. Add fresh ginger root and sweet potatoes. Cook for a few minutes.
4. Add the curry paste and stir it all together well.
5. Add broth, lentils, soy sauce (or alternative) and peanut butter.
6. Bring to a boil and then reduce the heat to low.
7. Cover and simmer for 20 minutes, ensuring the lentils are soft and the sweet potatoes quite tender.
8. Meanwhile, cook up some basmati rice or quinoa.
9. When the lentils are soft, add the coconut milk, spinach (or other leafy green), and lime juice. Stir well and simmer for about five minutes.
10. Serve over the grain of your choice and garnish with cilantro.
