Ayurveda Quinoa Vegetable Soup | for Vata, Pitta, Kapha


One of the main ingredients in our Ayurveda Quinoa Vegetable Soup | for Vata, Pitta, Kapha is quinoa.


Low carb and GI supportive, this Andean seed masquerades as a grain. First grown about 5,000 years ago, quinoa is tried and tested!


Packed with plant protein and fiber and gluten free, it is a terrific choice for everyone, but especially vegeratians and vegans who are often on the "gather" for protein.


Did nature create a better non-animal complete protein? Quinoa is nature showing off her amazing creativity. This amazing edible seed also offers all nine essential amino acids that we require.


At Saumya Ayurveda, our philosophy is gentle, less is more, and simple is good. Using this Ayurveda Quinoa Vegetable Soup as food as medicine, is also a gentle, nourishing way of cleansing and detoxing.

Ingredients:


  1. 4 tablespoons extra virgin olive oil or your best oil from your Saumya Ayurveda food program

  2. 1-2 red onion, finely chopped

  3. 4-6 carrots, (have some fun and use rainbow carrots), peeled and chopped, or circles if you prefer something more to bite into.

  4. 4 dark green celery stalks, chopped

  5. Add about 4 cups chopped seasonal vegetables, be sure to include some dark leafy green. (Fall harvest veggies include: string beans, sweet peppers, carrots, celeriac, chilies, Chinese cabbage, corn, eggplant, kale, spinach, chard, okra, peas, winter squashes, rutabaga, zucchini, tomato, turnips.)

  6. 3-6 garlic cloves finely chopped (not crushed). For Vata and Kapha, use more, for Pitta, use sparingly.

  7. 1 large can (28 ounces) diced tomatoes or fresh tomatoes (For Pitta and Pitta conditions, omit.)

  8. 1 cup tri-color quinoa, rinsed well in a fine mesh colander.

  9. About 4 cups broth of your choice

  10. 2-3 cups water (for a thicker soup, use less broth and water)

  11. 1 can (15 ounces) great northern beans or rajma (kidney beans) rinsed and drained

  12. 1 to 2 teaspoons lemon juice

  13. Optional garnishes: freshly grated Parmesan cheese, cilantro, croutons


Ayurveda Soup Churna:

  • ½ teaspoon dried thyme

  • ½ teaspoon caraway seed (Vata and Kapha can use more, Pitta use less)

  • 1 teaspoon Red Hawaiian Alean salt, adjust to suit your taste.

  • 2-3 bay leaves, depending on their size.

  • Pinch red pepper flakes (Omit for Pitta and Pitta conditions)

  • Freshly ground black pepper (Vata and Kapha can use more.)

Instructions:


1. Warm the olive oil in your favorite soup pot over medium heat.

2. Add the chopped onion, carrot, celery, vegetables, and a little salt.

3. Cook, stirring often, until the onion is translucent, about 5 minutes.

4. Add the garlic, tomato, thyme and caraway.

5. Pour in the quinoa, broth and water. Add 1 teaspoon salt, bay leaves, and a pinch of red pepper flakes. (Omit for Pitta and Pitta conditions.)

6. Add freshly ground black pepper.

7. Bring the soup to a boil, reduce heat to a gentle simmer, keeping the lid partially covering the soup pot for about 35 minutes.

8. Remove the bay leaves.

9. Stir in 1 teaspoon lemon juice and little more salt until the taste is just the way you like it.
